Creamy Mashed Potatoes & Ham Puffs

Cold winter days call for all your favourite comfort foods and a good movie to snuggle up to. If you’re still looking for the perfect comfort food and have some calorie space to spare in your system, you’ll have to try these little delights. The creamy pairing of mashed potatoes, sour cream and ham are all the reason to return to this recipe to fill your belly and warm your heart.

Ingredients (6-8 large puffs):

  • 1 cup mashed potatoes
  • 1/2 cup sour cream
  • 2 puff pastry sheets
  • 1/2 clove garlic, chopped
  • 4 slices Toupie style smoked ham, diced
  • Salt, to taste
  • 1 tsp dehydrated chives, to taste
  • Egg glaze (1 egg yolk mixed with 1 tbsp of water)

Directions:

1: Preheat oven to 400F.

2: Mix together the potatoes and the sour cream in a bowl.

3: Add in the diced ham and garlic and mix together.

4: Season with salt and chives.

5: Roll out the puff pastry sheets and flour generously. Cut into squares and place a tablespoon full of the mashed potato filling onto the middle of each square. Glaze the sides of the squares with some egg glaze.

6: Fold up the sheets. There are several ways to do it, but I like to simply fold two sides of the square into the middle and do the same with the other two sides. You can also pinch the opposite corners of the square together. Once folded, glaze with some more egg glaze. If you require more egg glaze, you can always make more using the same egg:water proportions.

7: Place puffs on a greased baking tray and pop into the oven for approximately 20 minutes. If the puff pastry is still soft, bake for several minutes longer

I love the way the mashed potato filling oozes out of the pastry with every bite. It really is love at first bite and a mouthful of happiness.
